Am I wrong in my understanding of classical French sauce making? There are 5 Mother sauces and the rest are classified as Daughter sauces, and there are several....per Jon's list, that would be items 1-3 but keep in mind I'm a purist when it comes to the classics. New techniques and styles are fantastic and I use them in my practice quite a bit.
