Simnel cake made for yesterday's Easter tea. Apostles represented by Amaretto chocolate truffles rather than the usual marzipan balls. http://tinandthyme.uk/2016/03/simnel-mincemeat-easter-cake/
A simple but effective simnel cake flavoured with Amaretto and using mincemeat for the fruit and nut element. This can easily be made at the last minute, although it will also keep for a couple of weeks. Decorated here with chocolate Amaretto truffles instead of marzipan balls.

Introduction
Formerly blogging at Chocolate Log Blog, now at Tin and Thyme. I'm passionate about real food, local food and chocolate. I am a vegetarian cook, baker, recipe developer, reviewer and writer. 

Although chocolate is no longer the main focus of my blog, it still features regularly. I cook, review and write about pretty much any angle of food and drink as long as it's vegetarian. There is a particulary emphasis on my home county of Cornwall and the South West in general.
