It was a friend’s birthday a couple of weeks ago and we had been invited over for lunch. This was to be followed by a walk from Respryn Bridge at Lanhydrock to Duchy Nurseries  so we could indulge in a cream tea. But first a cake was in order. As it was a…
A deliciously moist cake with a good crumb structure which cuts well. Flavoured with tart rhubarb and orange and drizzled with a hot ginger glaze.

Who doesn’t like a drop of Baileys? I know I certainly do. I blame my grandfather. It was one of his favourite tipples which he took particular care to introduce to me at an early age. CT’s rather keen on it too. But it’s not just a nice drink made with a…
A quick but luscious no-churn ice cream flavoured with Baileys and marbled with dark chocolate. Chocolate sauce flavoured with Baileys adds the finishing touch.

Pasta is one of those standbys that is perfect for meals in a hurry. I often make tomato sauce to go with pasta and add carrots and onions and any other vegetables I happen to have around – parsnips work well. The other day, I was in even more of a hurry…
A super speedy no-cook tomato sauce for hot pasta made in a blender. Added carrots and seaweed give extra flavour as well as nutrients and chilli for a bit of heat.

I'm really keen to try this. Anyone know if we can get pandan in the UK?
Pandan extract gives this traditional Vietnamese cake a vibrant, green hue.

It’s rare for a week to go by without me baking something, but I don’t always manage to bake ninety six cakes all in one day. Admittedly, they were mini cakes, not large ones, but I still felt like it was a bit of an achievement.
Easy to make, mini chocolate cakes with chocolate icing and a surprise liquid chocolate centre.

In my youth, when it was rare to know anyone who had travelled abroad, I was a lot more adventurous than I am now. At just eighteen I set off to work in a Swiss hotel in order to learn French, something I hadn’t managed to pick up at school. At various…

Great way of getting lots of basil for all those summer dishes.
Rooting basil cuttings in water is so easy!

Introduction
Formerly blogging at Chocolate Log Blog, now at Tin and Thyme. I'm passionate about real food, local food and chocolate. I am a vegetarian cook, baker, recipe developer, reviewer and writer.

Although chocolate is no longer the main focus of my blog, it still features regularly. I cook, review and write about pretty much any angle of food and drink as long as it's vegetarian. There is a particulary emphasis on my home county of Cornwall and the South West general.
