This dish not only looks amazing it tastes out of this world! I created this Nigerian Dodo chicken for one of my #flava loving clients and it is one of my favorite flavor combos ever. Dodo chicken is usually made with gizzards, I make this one with chicken thighs. It has plantain, peppers, onions, tomato, garlic, habanero and a crazy good African seasoning blend I make that is šŸ’ÆšŸ‘Œ. Lots going on in the kitchen of my semi vegetarian clients today! Nuts and seeds and grains are always soaked and ready when I show up at their door then I get to play with the mostly local vegetables I've picked up before arriving. Today I made a vegetable and brown rice pasta lasagna (no cheese) with a nightshade free beet/carrot based sauce, a Spanish-style paella made with chickpeas and brown rice, smoky spices and turmeric plus lots of warming vegetables simmering down in the corner, a grain-free crust (using teff + almond flours) ready and waiting for the eggs to top the smashed sweet potato, caramelized local mushroom, green onion and garlic herby base. Also made some shiitake-nut burgers and some fresh salads like carrot-ginger and a cauliflower-walnut creation. This food always smells so amazing and I feel so good cooking it because I know they love to soak up all of that nutrition+love. :) #LoveMyClients #nourish #fuel #eatreal #realfood #EatLikeAChampā„¢ ļ»æ

My little man making Mama's meatballs and sauce. šŸ˜ I realize that saying your meatballs are better than someone's mamas/grandmas/dads/etc. meatballs is pretty much like inviting a war, but I'm totally going there (because I've had a lot of people's so called "legendary" meatballs and been disappointed) and saying that Big D's meatballs and sauce are THE BEST, most perfectly balanced, superbly spiced and flavored, tender and incredible meatballs I've ever had!! I gave him all of my secrets, which he promised not to tell, but something about his technique made them even better! Want to make this šŸ“healthy, šŸ†amazing, no-bake tart? Head to my website (ChefKirstenHelle.com) and on the first page you'll scroll down to find my Coconut-Date-Nut energy bites recipe. Pop the simple ingredients into your food processor as directed, then press into a tart/pie pan. Top with vanilla Greek yogurt then go to town with all of the fruit you love. You'll probably make it even prettier than my version I made for my client today. :) This tastes buttery, rich and decadent and it's SO good for you! #PizzaDay šŸ• celebration in mi casa. I didn't know it was National Pizza Day but my kids made sure I did. They wanted to get take out but Id rather do without the stomach ache. I threw together a #heart #healthy veggie pizza that they actually loved and ate every bit of! Crust is a take on the cauliflower crusts so many of us love (search them up online you'll find a ton) but mine is made with shredded golden beets and broccoli because that's what I had in the crisper. :) Baked that up all crispy and browned and topped with a bunch of mushrooms I let get all crispy in the pan before adding cubed butternut squash and garlic to get soft and smash up. Spread that over the crust and added just a bit of low fat mozzarella cheese to get the bubbly goodness. Otherwise I probably wouldn't get away with calling this creation a pizza. ;) Eating 1/3 of the pizza racked in a whopping approximate 300 calories! #LowSodium #bringlifetothetable #nourish #healthified #comfortfoodmakeover ļ»æ

I want to come home to this! Sesame rice noodle, quick Mongolian beef (how-to below) and a quick cucumber-carrot pickle bowls to grab for their work lunches for my #flava loving client today!

How to make this quick and super easy Mongolian beef style ground beef: (makes 4-6 servings)
1 lb leanest ground beef or bison
1 onion thinly sliced
1 bunch green onions cut into 2" pieces
3-4 cloves garlic, minced
3 Tb tamari soy sauce, reduced sodium
2 Tb honey
1 tsp rice vinegar
Handful, or to taste, dried chili de arbol

Heat a large skillet or walk over high heat, when hot add a dab of coconut or avocado oil, swirl to coat. Add all of the ingredients at once and stir like crazy to break up the beef and get everything tossed around in the goodness. It's all done when the beef and onions are slightly charred and the sauce has evaporated off to a yummy glaze-like consistency.

Eat over rice, cauliflower rice, on a salad, in lettuce wraps, whatever floats your boat! Enjoy!

Day 1: Slow cooked Guamanian chicken, red rice, sauteed bok choy *Active cooking time is about 15-20 minutes, the rice takes 45 minutes to cook.
Day 2: Chicken & veggie wraps, quick veggie soup *Start to finish less than 20 minutes!
Day 3: Chickpea falafel salad with Tzatziki dressing (you can also make sandwiches with the falafel if you wish) *Falafel takes about 20 minutes to prepare, the rest comes together while youā€™re cooking them!
Day 4: Shrimp, spinach and mushroom scampi pasta *About 20 minutes to make!
Day 5: Chicken Di Pana (white wine butter sauce - yes itā€™s healthy!) with garlic sauteed rice and sauteed broccolini
Bonus Dessert: Venetian Carrot Cake (A Nigella Lawson recipe)ļ»æ

I had a lovely time at Campbell's Resort this past weekend. The room was nicely updated, clean and attractive. The pool and beach front was so fun to enjoy as well! We loved the food at the Pub as well as the bistro, hoping to have an experience at the spa next time! I held back one star simply because I felt the service (at the hotel only, the restaurants were wonderful) wasn't 100% for such a place. There were some a few minor issues and usually at places like this the impeccable service is what sets them apart and drives you back to spend the money at such a resort. Minor issues are no big deal, mistakes happen but when they do the guest should not be made to feel as if it is a hassle for the resort to fix the problem they caused. That was my only drawback but other than that a lovely place we will definitely return to simply for the location, amenities and great family time.

I popped in here for a quick bite in between appointments and I am so glad I did! I got there in time for Happy Hour and had an amazing bowl of chicken coconut soup for only $5. The other happy hour offerings looked wonderful too. I also ordered the Silver Spoon special salad with shrimp. WOW it was LOADED with shrimp and had an amazing flavor! I do wish the greens were romaine instead of iceberg, but it was still fabulous. So fresh, crisp and vibrant. The atmosphere was wonderful and the best thing was the service. You are greeted with a smile, served quickly and efficiently, there is nice music on in the background and treated well the entire time. I'll definitely be back when I'm in the area!
