In case you missed this recipe last week, I thought I'd share with you again! When I made the commitment to creating a healthy new family legacy my #1 change was to only eat "Real Food". I cut out all of the diet foods, processed "light/low-fat" junk I'd been eating for years desperate to be thin. I changed my focus to eating to live and it gave me the energy to work out more, helped me feel satisfied with healthy portions of food and over 100 pounds came off! Most importantly my blood lab work was perfect just a month or so after making these changes.

These are they types of meals I made and continue to make so I can bring life to the table and enjoy the gifts that a delicious, nutritious meal brings: health, enjoyment, time with family around the dinner table and nourishment.

My Thai lettuce wraps don't just get garnished with fresh herbs, they are packed with over a cup of the fresh punch of flavor + nutrition! Thai basil, cilantro and mint, lime and loads of vegetables. I'll share my recipe tomorrow!

I am honored to say I've added another professional athlete to my client roster! I'm working for Boston Celtics' Isaiah Thomas this off-season, he's taking his nutrition very seriously and learning how to Eat Like a Champ!

A lot of the athletes I work with have a sweet tooth and while I work within their dietary restrictions, there is always a way to make these little Date-Nut Energy Bites fit and they're a perfect fuel for an athlete working through two-a-days - or a snack for Super Mom to gear you up for an afternoon workout after running around after kiddos all morning!

Don't these look like those crispy little frozen processed fries many of us grew up on? Well these are butternut squash crinkle cuts and they have one ingredient: butternut squash! I baked them up crispy in a hot oven with a little bit of coconut oil, salt, pepper and onion power. Bake at 450 degrees until crispy and al dente and enjoy! Available at @traderjoesfood

Ho-ly-mo-LY these grilled carrots were delicious! Easy to make too, a wonderful side dish for any meal on the BBQ! Do you think you'll try this recipe? If so, here is how we made them:
I grilled'em, Chef Tana of Kefi Taverna drizzled them with farm fresh honey and doused them with fresh mint and a hit of pickled peppers for a bright acidic punch to balance out the sweetness.
Yum!

I had a lovely time at Campbell's Resort this past weekend. The room was nicely updated, clean and attractive. The pool and beach front was so fun to enjoy as well! We loved the food at the Pub as well as the bistro, hoping to have an experience at the spa next time! I held back one star simply because I felt the service (at the hotel only, the restaurants were wonderful) wasn't 100% for such a place. There were some a few minor issues and usually at places like this the impeccable service is what sets them apart and drives you back to spend the money at such a resort. Minor issues are no big deal, mistakes happen but when they do the guest should not be made to feel as if it is a hassle for the resort to fix the problem they caused. That was my only drawback but other than that a lovely place we will definitely return to simply for the location, amenities and great family time.

I popped in here for a quick bite in between appointments and I am so glad I did! I got there in time for Happy Hour and had an amazing bowl of chicken coconut soup for only $5. The other happy hour offerings looked wonderful too. I also ordered the Silver Spoon special salad with shrimp. WOW it was LOADED with shrimp and had an amazing flavor! I do wish the greens were romaine instead of iceberg, but it was still fabulous. So fresh, crisp and vibrant. The atmosphere was wonderful and the best thing was the service. You are greeted with a smile, served quickly and efficiently, there is nice music on in the background and treated well the entire time. I'll definitely be back when I'm in the area!
