Day 1: Slow cooked Guamanian chicken, red rice, sauteed bok choy *Active cooking time is about 15-20 minutes, the rice takes 45 minutes to cook.
Day 2: Chicken & veggie wraps, quick veggie soup *Start to finish less than 20 minutes!
Day 3: Chickpea falafel salad with Tzatziki dressing (you can also make sandwiches with the falafel if you wish) *Falafel takes about 20 minutes to prepare, the rest comes together while you’re cooking them!
Day 4: Shrimp, spinach and mushroom scampi pasta *About 20 minutes to make!
Day 5: Chicken Di Pana (white wine butter sauce - yes it’s healthy!) with garlic sauteed rice and sauteed broccolini
