Hitting newsstands today! This is the second national magazine cover I've been on this year, that is so crazy! I'm certainly not a model and I'm certainly not the "perfect" body that we normally see on the covers of magazines. I only share my story because I hope my message that you can get and be healthy - and that looks different on everyone- when you set out to create a healthy family legacy, not focus on a size or number. I want a healthy body that can take me through this beautiful life as long as possible and I also want to enjoy all that life has to offer. I also want to be a good role model for my kids, that is my main driving force for everything I do. Vibrant, healthy and delicious food, lots of time with family and friends, getting to take time to exercise in ways that I enjoy and make me feel good, a positive outlook on life, feeding the spirit and lots of love love love and a little wine, chocolate and occasional splurges. 😉 That's the secret to a healthy body and the end to dieting and self-hate!

Here's a super #fresh, #healthy & refreshing summer salad perfect as a side dish or to add along with hummus to a whole grain pita, top 'yer tacos, mix into creamy mashed avocado for a guac with crunch...any other ideas how you'd use it? Finely chop: Cucumber, radish, jicama, lime juice. Add some minced garlic, grated ginger, rice vinegar and olive oil, maybe some minced fresh mint and cilantro to give it even more zing if you like! My clients crunched this along with their herb poached #wild salmon today for lunch, a perfect light summer lunch! #realfood #nourish #eatreal #bringlifetothetable #salad

In case you missed this recipe last week, I thought I'd share with you again! When I made the commitment to creating a healthy new family legacy my #1 change was to only eat "Real Food". I cut out all of the diet foods, processed "light/low-fat" junk I'd been eating for years desperate to be thin. I changed my focus to eating to live and it gave me the energy to work out more, helped me feel satisfied with healthy portions of food and over 100 pounds came off! Most importantly my blood lab work was perfect just a month or so after making these changes.

These are they types of meals I made and continue to make so I can bring life to the table and enjoy the gifts that a delicious, nutritious meal brings: health, enjoyment, time with family around the dinner table and nourishment.

My Thai lettuce wraps don't just get garnished with fresh herbs, they are packed with over a cup of the fresh punch of flavor + nutrition! Thai basil, cilantro and mint, lime and loads of vegetables. I'll share my recipe tomorrow!

Winner-winner Mahi Mahi dinner. (? Not a thing?) It is now! 10 minute low-heat meal that is full of nutrition, heart-healthy and a nice light summer dinner or hearty lunch! For the black bean salad: whisk the juice of 1 lime, 1 Tb olive oil, 1 clove garlic, 1/2 tsp honey in a bowl. Add 1 can black beans (rinsed and drained), 2 chopped green onions, 1 red bell pepper, 1/2 cup pineapple tidbits (canned in juice, or use fresh), 1/4 cup chopped fresh cilantro, toss everything together. Meanwhile grill/saute up a simple piece of Mahi Mahi or any other fish of your choice. I have these delicious little perfectly portioned and marinated (with simple ingredients) fillets from the frozen food section at Costco I fall back on when I need dinner in a pinch.

So thankful for people like these ones. :) I had the immense pleasure of creating a custom cooking class and serving this wonderful family tonight. They donated to Hopelink last year at the Farm Fresh Feast I had the pleasure of speaking at. They were one of the three couples that got into a bidding war for my service that ended up bringing $15,000 more to the incredible efforts that Hopelink brings to help so many in need. Huge hearts, generous spirit and devotion to making this world a better place. These are the kind of people I love to be around. Not that it's possible to get tired of Italian meatballs, but when you're ready switch up your meatball game I've got these healthy and spicy little Moroccan inspired meatballs in a Harissa tomato sauce to jazz up your dinner! My clients love them and my family does too. Delicious over a healthy bed of flavorful lentils, round it out with a simple grilled/roasted vegetable or salad. I'll be sharing the recipe tomorrow!

I had a lovely time at Campbell's Resort this past weekend. The room was nicely updated, clean and attractive. The pool and beach front was so fun to enjoy as well! We loved the food at the Pub as well as the bistro, hoping to have an experience at the spa next time! I held back one star simply because I felt the service (at the hotel only, the restaurants were wonderful) wasn't 100% for such a place. There were some a few minor issues and usually at places like this the impeccable service is what sets them apart and drives you back to spend the money at such a resort. Minor issues are no big deal, mistakes happen but when they do the guest should not be made to feel as if it is a hassle for the resort to fix the problem they caused. That was my only drawback but other than that a lovely place we will definitely return to simply for the location, amenities and great family time.

I popped in here for a quick bite in between appointments and I am so glad I did! I got there in time for Happy Hour and had an amazing bowl of chicken coconut soup for only $5. The other happy hour offerings looked wonderful too. I also ordered the Silver Spoon special salad with shrimp. WOW it was LOADED with shrimp and had an amazing flavor! I do wish the greens were romaine instead of iceberg, but it was still fabulous. So fresh, crisp and vibrant. The atmosphere was wonderful and the best thing was the service. You are greeted with a smile, served quickly and efficiently, there is nice music on in the background and treated well the entire time. I'll definitely be back when I'm in the area!
