After trying different plates and renditions of Brussels Sprouts all over Asheville, the owners of the Carolina Bed & Breakfast (that's us!) come home to experiment with creating a small bite centered around this ubiquitous vegetable for their evening social hour.  Lots of trial and error resulted in many good dishes.  The recipe for the winner is included!

As one of the first Associate Members of the WNC Cheese Trail, guests of the Carolina B&B can tour this creamery and others while enjoying local cheese at our inn.  We can also arrange picnics for you featuring these cheeses.  What could be more wonderful than a picnic in the sun high up on the Blue Ridge Mountains.  Visit our specials page for more information

Just one more thing to love about our town.  Sometimes the earnest, caring  people get lost behind the noise of "Beer City" and Music.  There are beehives in the gardens of my neighbours (and in typical Asheville fashion they are painted bright blue and orange and yellow) .  And gardens abound in our yards.  Just the way it should be!

Down here in the South we take our Bourbon seriously, as we do our food. This event centered around both and took the food (and drink) from farm to chef to cookbook.  Similar events are planned for this summer and fall. Each will be based around an Asheville cookbook, product and restaurant.

Every Thursday Night I join a group of friends in a dance studio located above Loretta's Cafe in downtown Asheville where we are learning the "Single Ladies" dance from Beyonce's video.  This is considerably harder than you might think.  The song is incredibly fast and she has a lot of moves.  As the oldest woman in the group it varies between humiliating and hilarious!  One of the things that makes it even more fun is the fact that we share the studio with an artist so we have been able to watch the creation of this fabulous Mardi Gras costume as it has unfolded over the past month.  The parade is this Sunday and if this costume is an indication, it will be awesome!

This is a cute little article about Asheville.  What the writer doesn't know is that New Yorker's have been coming to our city for more than 150 years.  It's no surprise that some of our streets are named after Manhattan streets, or that we have our own Flatiron building (with a whimsical sculpture in front of it).  The NY Yankees used to play exhibition games here on their way home from spring training.  Babe Ruth was rumored to have died in Asheville when he collapsed at the train station (too much high living!).  I could go on but you really need to come here to make your own connections!

We had lots of fun this past week with a friend whose video went viral! I'm still not sure exactly what makes a video click but if you had asked me in advance if this one would, I would have said it certainly looked like one which would!

Edited to add (2/20/2014): We recently stayed for the fifth time at Carolina Bed & Breakfast. It's truly our home away from home while we're in Asheville. Breakfast continues to be outstanding and innovating. Not once in five stays have we had a true repeat of a past meal. Do not skip the bedside sweet treat. Our favorite is the lemon/lime bar that's super tart and balanced with wonderful sweetness. We enjoy the B&B because of all of the above. We keep coming back because of the wonderful hosts. James and Susan make you feel like your staying with great friends. We will continue to stay at this B&B every time we visit Asheville. Our stay at the Carolina Bed & Breakfast was wonderful! James and Susan were exceptional hosts and fascinating people. We really enjoyed getting to know them. The B&B was beautiful with well appointed, large rooms. Our room (Hummingbird) had a great gas fireplace which made things very cozy. Finally, the breakfasts and afternoon snacks were amazing. The pear/goat cheese tart was amazing and could only be topped by the mango upside down bread pudding. We will be returning to this awesome B&B in the near future!

James & Susan did an outstanding job making us feel right at home. Their hospitality is unmatched in our other b&b experiences. Excellent food, excellent company, excellent accommodations. Would highly recommend for a romantic weekend.

I've been here twice and was extremely happy with both of my visits. I had James put out cakes for my girlfriend and I's anniversary, and it was delicious and wonderful. They are very accommodating to requests here, and the house is quite comfortable and beautiful. Our bathroom in the Mockingbird room was fabulous, with a perfect jacuzzi. This place is great for a romantic getaway.

This B & B is simply superb. We had a great time. The hosts accommodated our dietary preferences. James helped us organize our time efficiently and gave wonderful directions. Susan's 5:30 "snacks" are not to be missed! Its certainly one of the best B&Bs we have ever stayed in.

There's a reason this B&B has so many excellent ratings. It's a lovely place that's conveniently located with beautifully appointed rooms. We found the photos to be a good representation of the house. You won't be disappointed! Susan and James are lovely. The breakfasts are breathtaking and get your day started right! James is a wealth of information on things to do and (most importantly) where to eat. We wouldn't even consider any other place on our next trip to Asheville. If you see a room you like--book it! They fill early. The good places always do.

This was our first trip to Asheville, and we stayed here due to the good reviews even though we are not necessarily "Bed and Breakfast people". We are absolutely thrilled with the decision, as our stay could not have been any better! We cannot wait to come back and spend some more time in the wonderful Asheville area and at the Carolina Bed and Breakfast. James and Susan don't miss a single detail. Breakfast was incredible each morning, we especially enjoyed they delicious hors d'oeuvres and wine in the early evening with the other guests, and then coming home to delicious freshly baked treats in our room at night was a great touch. We easily walked to downtown from the location, and James was a wealth of knowledge about the area, restaurants, Biltmore, etc. Our room was top notch. Fire place, air conditioner, jacuzzi tub, king bed - the bathroom was great and everything was clean and comfortable. It was a real treat to stay at Carolina B&B - we can't recommend it enough.
