This roasted asparagus bruschetta is a perfect appetizer for spring gatherings or as a side to soup or salad. #asparagus  
While local tomatoes are still a couple months out, I’ve been making bruschetta with roasted asparagus. It’s made the same way that traditional bruschetta is made, but substituting thin stalks of that spring darling, asparagus, and lightly roasted.

For a tasty & filling dinner that's ready in no time, I love this Curried Lentil Soup.  Plus, it costs only change to make! 
When my cupboard is bare, I make pantry-friendly Curried Lentil Soup. All of the ingredients utilize pantry and refrigerator staples – red lentils, garlic, onions, and spices. Those are foods I have on hand all the time and have long shelf lives.

My favorite way to cook French lentils du Puy is with caramelized onions and toasted pistachios on a bed of sautéed kale, and often with a side of baked fries. The sweetness of the onions and salty richness of the nuts combines beautifully with the tinny lentils.
