Maple promises so much: restaurant-quality food, made with high-grade ingredients by celebrated chefs--all delivered to your door for about $12. This is not an easy proposition, especially when Maple promises to deliver that food hot. But the experiment isn't working--for me, at least. I've given Maple two chances: on the first, I received a roasted chicken breast that was so dry, I had smash the stringy pieces into the liquid from the tasteless swiss chard underneath, and choke down the pieces in between gulps of water. On the second, I received a dense broccoli pancake with a chunky "Romesco" that had none of the best qualities of a Romesco: a remarkable blended symphony of nuts, peppers and vinegar that boasts more flavor in sum than its parts would suggest. The accompanying roasted carrots were nothing more than bland orange discs: no olive oil, no salt or seasoning. I doubt that David Chang would find this appetizing. And I hope that he and the other chef-backers will help turn these local canteens around.

The large wine list (by the bottle) and selection of "flights" make this a great place for drinking; the tapas are, however, uneven in quality. The daily cebiche--ours was merluza with passion fruit, nuggets of cucumber, slivers of red onion and herbacious greens--was excellent and a substantial portion. The quinoa salad with broccoli, though, was bitter, wet and lacking in textural complexity. The location in Lastarria, the bohemian center of Santiago, is fantastic and the combination of excellent wines and (mostly) good food make this a fine choice for a light dinner or pre-dinner drinks.

Warm and gracious hosts, great food--all made on premises--and a lovely setting. Our meal was: -House made aglianico wine--excellent -Antipasti misti (ripe tomato bruschetta, house-made prosciutto and salami, stuffed zucchini, ricotta in breadcrumbs) -house made fusilli with tomatoes from the garden -roasted lamb chops (from their lambs), salad and fries potatoes (also grown on property) -fruit, cheese and local chestnut honey -homemade pastry with grape marmalade -homemade grappa and liquirezia Fantastic. Come hungry!
