I didn’t complain of course as we could see in full view all the action that took place in the restaurant’s open kitchen, manned and maintained by the owners themselves – Kurt Famador and Barbra Sia. The controlled chaos that ensued during service reminded me a lot of Top Chef’s Kitchen Wars – queued paper slips, fired orders, and for final touches – swirled sauces and the occasional tweezified microgreens.

Camden fits the typical description of a hipster space – industrial interiors with predominantly neutral palettes, a single communal table and a neon signage right inside the cafe. To top it all off, they play a mildly addictive playlist on loop, the songs of which I guess were taken from those indie-label bands who are too cool to be mainstream.

We walked towards a small clearing in the village to witness a tadek, a traditional celebratory dance common in the Philippine Cordilleras.

The locals huddled first to listen to the beat from each gong, harmonizing until they achieved the right rhythm and sound. They would then begin dancing- snaking in and out of an invisible spiral.
