Penne with Roasted Tomatoes and Goat Cheese. So easy!
Here's all you need:
12 ounces roma tomatoes, trimmed and halved (quartered if large)
1/4 cup olive oil
3 sprigs fresh thyme
salt and pepper, to taste
1 pound penne pasta, cooked according to package directions
1/3 cup goat cheese

Super easy directions:
Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil or parchment paper.
Toss halved tomatoes with olive oil, thyme, salt and pepper. Arrange on prepared baking sheet in a single layer, cut side facing up. Roast for 25 to 30 minutes or until tomatoes are shriveled and juicy.
Divide pasta among serving bowls. Top with tomatoes and crumbled goat cheese and serve.

Some may be in need of a nice salad, here's a really tasty one:🍎 🥗
Radicchio Apple Salad (serves 4)
Ingredients:
1½ tablespoons honey
1 lemon, juiced
1½ tablespoons Anna’s Country Kitchen apple cider vinegar
1 small shallot, minced
Flaky salt, like fleur de sel, and freshly ground black pepper
4 small radicchio or endive heads, stems removed and leaves separated
2 Apples, quartered, cored and thinly sliced (use your fave)
½ cup basil leaves, roughly torn
1¼ cup Goat cheese
4 tablespoons Italissima extra-virgin olive oil
1. Make the dressing: In a small bowl, whisk together honey, lemon juice, vinegar and shallots. Taste and season with salt and pepper. Set dressing aside.
2. Tear large radicchio leaves into 2-to-3-inch pieces. Thinly slice apples.
3. Assemble salad: Over the surface of a large platter or wide, shallow bowl, spread half the radicchio leaves in a single layer. Arrange half the apples, basil and bits of cheese evenly over radicchio, leaving some spots uncovered. Season with salt and pepper. Arrange remaining radicchio leaves on top, followed by remaining apples, basil and crumbled goat cheese. Season again with salt and pepper. Whisk oil into dressing and spoon dressing generously over salad. Serve immediately.
