On a whim this year we decided to make smoked meats holiday gift baskets.  It has been more work than I anticipated but it is fun.  So far we have lox, Canadian bacon, merguez (lamb) and andouille sausage, pulled pork and hard cider caramel onion BBQ sauce.  I have some pork bellies in the smoker getting ready for their third smoke with apple wood to finish the basket off with triple smoked bacon.

I have a slightly modified original Bradley smoker, with an Auber dual probe PID temperature controller.

I have been smoking at home for a few years.  I like making Canadian bacon, bacon, lox, pastrami, sausage, ribs and pulled pork.

I am finding I would like to mute some circles from my feed. I can go to a circle to only hear what they are hearing, but I want to make that my primary feed rather than the one with guru's that I don't know but would like to follow. Especially on my phone.

+Chuck Falzone , how are you handling this?

I am starting to get antsy. My classes have been finished for too long and I have begun checking my MBA website every day to see if they've posted the itinerary for my next class so I can order my textbook and start reading ahead.

Education. It can be habit forming. Approach with caution.

This is an awe inspiring use of my camera body (Nikon D5100).... and a special motion dolly and some good software. Gorgeous.
