Every so often I run across something on Smitten Kitchen that I absolutely must try right away. Fortunately I ran across "Carrot Cake Pancakes" just in time for a late night snack.

Minor deviations: didn't have buttermilk, used lowfat and added lemon juice to fix the acidity. Also decided to pass on the cream cheese frosting and just used maple syrup - I was not disappointed. :)
