I wanted to put some information together about smoking chicken as I personally think chicken is underrated is often overlooked in favour of the more popular cuts such as brisket, pork ribs and pulled pork. Anytime someone buys a new spit or smoker, the first thing I tell them to cook is a chicken. It is the cheapest and easiest cut of meat to start out cooking and it's delicious too! Grab your thermometer, chicken and smoker and you're good to go. Read below for some poultry smoking tips.

The popularity of pulled pork has reached an all-time high, with now even the mainstream fast food joints touting pulled pork rolls. For me honestly, pulled pork is overrated and is really all about the sauce. Give me a whole pig, some pork belly or a rack of ribs any day! Read bellow for tips on smoking pork.

I'm not sure about you, but I absolutely LOVE smoked lamb! Actually, I enjoy lamb cooked with charcoal in general, whether it be a whole lamb on a spit, a few shoulders cut up into Greek-style gyros, cutlets over the grill or a shoulder or a leg cooked low and slow in a smoker. You know as a pitmaster If you manage to smoke the perfect beef brisket, you've made it. Personally, I think brisket is over-rated, but that's just me. I'm not saying that I don't like it or cook it, but I just don't think it's as amazing as everyone makes it out to be. When I smoke beef, I'd much prefer to smoke a beef rib rather than a brisket. In our opinion, the grill is the most under-utilised function of the Cyprus Spit but it’s the easiest part to cook on. We lit the Mallee Root charcoal and once it ashed over we spread it out of the space of the spit tub to create an even heat for our grill. We are going to cook seafood today which won’t take long based on the heat of the charcoal. Read and watch below for more information.

Cooking a few chicken drummettes on a spit roaster is an easy way to cook for just a few people. While you can cook a roast chicken using normal rotisserie spikes, cooking a chicken drummettes in a basket will give you a delicious smoky flavour and make you the charcoal chicken king or queen. Pork ribs is a favourite whenever you go to any BBQ restaurant, but why not give it a crack at home for yourself? It's not as hard as you may think!
