Tomatoes are in season and I thought I'd share my simple recipe for making a delicious sauce. You can substitute with your favourite herbs of choice (I vary this with parsley, thyme and oregano but ALWAYS use my fav herb Basil). This really is super easy to make. I have frozen 9 tubs from 5kg of tomatoes. A great way to preserve your harvest + packed with nutrients & flavour. No need to add liquid as the tomatoes cook in their own juices. I use this sauce with eggs at brekkie time, with meats, pasta, over vegetables, spread on home made pizza or bread, and to simmer chicken in. Lots more ways to eat it too! If you don't eat sugar, add a couple of stevia leaves (or powder) - a natural sweetener. You can also blend this sauce for a smoother consistency but I love the chunky texture and colours. Feel free to share!

Love tomatoes? DID YOU KNOW: Tomatoes are a great source of phytonutrients, Vit C & E, betocarotene & antioxidants (particularly from lycopene) which is essential for bone health. Research studies show tomatoes also provide essential nutrients for heart health, prevention of osteoporosis and anti-cancer benefits. Remember to store them at room temperature NOT in the fridge as they are sensitive to cold and this slows ripening. If your tomatoes are ripe and you're not ready to eat them, take them out of the fridge 1/2 hr before so their flavour and juiciness returns. Enjoy!
