I love the ATK family, the Cooks Illustrated magazine editorial by Mr. Kimball always makes me smile as a stark comparison living in NYC. I am intrigued by the title of this book as it resonates with my interests. Not to compare with other publishers / chefs / cooks, but is this similar to the "Good Eats" of my friend Alton Brown? He always tried to explain the "why" behind cooking, not just what to do.  If so, put me on the list for this book.
