Cooking perfect rice is a point of pride. It tooks me twenty years to perfect my method. It is an art that requires apprenticeship, it requires journeyman status, til one day you have become a Master.
Pork with rice and gravy. High-roast chicken with rice 'stuffing', beans and rice, and my masterpiece Spanish red rice (I am Hispanic).
I have shed blood sweat and tears to get to kick ass rice status.

..... all things being equal, invest in a small propane torch, and a bottle of Coleman propane gas. It makes lighting coals and wood so much faster and easier, without the smell and mess of 'starter fluid'!

Introduction
America’s Test Kitchen is a very real 2,500-square-foot kitchen located just outside of Boston. It is the home of Cook’s Illustrated and Cook’s Country magazines and is the workday destination of more than three dozen test cooks, editors, and cookware specialists. Our mission is to test recipes over and over again until we understand how and why they work and until we arrive at the best version. We also test kitchen equipment and supermarket ingredients in search of brands that offer the best value and performance.
