When +Azlin Bloor does a tagine...it's authentic! Love this Lamb Shank and Rhubarb! I can just taste the flavors!!
Lamb Shank and Rhubarb Tagine

Continuing the Tagine Masterclass series on LinsFood, is this very seasonal tagine recipe. I drew inspiration from an old Persian family favourite, Khoresh Rivas, or Rhubarb Stew.

The Persian rhubarb stew is pretty simply flavoured, with just a few ingredients, and I’ve tried to keep with that theme for this Lamb Shank and Rhubarb Tagine dish as well, going with flavours that will both complement and contrast with the sweet and sour nature of rhubarb.

Meltingly tender lamb sits perfectly with the sharp and sweet rhubarb; with a supporting cast of sweet tomatoes, sweet and-a-touch sour apples, sweet, citrusy ginger and in the background, just a hint of the inimitable saffron.

And to me, nothing allows you to appreciate the riot of flavours in this dish than fresh bread, the fresher, the better. That's not to say that couscous, rice and pasta won't work, of course.

Khlea (Khlii), Moroccan Preserved Meat

Our next recipe in the Tagine Masterclass series is different from the normal tagine recipes you find everywhere. We’ll be cooking the super easy Khlea and Egg Tagine, or simply put, Scrambled Eggs and Khlea!

So I thought I would first introduce you to the delights of Khlea or Khlii, a Moroccan preserved meat, very similar to the French duck confit (Confit de Canard) used in Cassoulet. Small pieces of beef or lamb are marinated then cooked, before being preserved in fat and stored in the fridge.

I know it’s not the prettiest thing to look at, but boy, are looks deceiving! If you’ve ever had duck confit, you’ll know what I’m talking about!

This recipe I learnt in one of the local cafes we frequented in Salé, Morocco, on our last trip. Salé, is apparently, where this quick method of cooking Khlea originated, or so I was told! Whatever its source, suffice it to say, it has become a crucial part of my cooking and teaching.

So, let’s get ready for our next tagine recipe by making khlea at home! Once made, it lasts about 3 months in your fridge, so that’s an added bonus, you’ll always have some at hand! Also, it will be ready to eat immediately, but the longer you keep it (up to a point), the better and more concentrated the flavour, just like regular confit.
