Ideal Protein Dinner Recipe
Spiced Chicken Stuffed Peppers
Serves 4 (Great for all Phases)

Ingredients:
• 1 lb. ground chicken breast
• 4 large green peppers, cut off the top and remove seeds
• 2 tsp. olive oil
• 2 garlic cloves, minced
• 1 jalapeño, chopped (remove seeds and stem if you like it less
• spicy)
• ¼ tsp. red pepper flakes
• 1 tsp. cinnamon
• 2 tsp. cumin
• 1 tsp. coriander
• ¼ tsp. sea salt
• ¼ tsp. black pepper

Directions:
1. Preheat oven to 350 degrees.
2. Boil a large pot of water. When water is
3. boiling add the green peppers and cook for 2 minutes.
4. Remove peppers from
5. the pot and place on a dish.
6. Heat a large skillet over medium-high heat. Add olive oil to the pan.
7. Add red pepper flakes and garlic and cook for 30 seconds.
8. Next, add the ground chicken. Then add jalapeño peppers and the cinnamon, cumin, coriander, sea salt, and pepper.
9. Cook until the chicken is browned.
10. Place peppers in a baking dish. Next, add the chicken mixture into the peppers. Place in the oven for 20 minutes.
11. Serve hot.

Lemon Garlic Shrimp (great for all phases)
Equals two servings for protein and veggies

Ingredients:
• 4 teaspoons extra-virgin olive oil, divided
• 2 large red bell peppers, diced
• 1 pounds asparagus, trimmed and cut into 1-inch lengths
• 2 teaspoons freshly grated lemon zest
• 1/2 teaspoon salt, divided
• 5 cloves garlic, minced
• 1 pound raw shrimp, (26-30 per pound), peeled and deveined
• 2 tablespoons lemon juice
• 2 tablespoons chopped fresh parsley

Directions:
1. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add bell peppers, asparagus, lemon zest and 1/4 teaspoon salt and cook, stirring occasionally, until just beginning to soften, about 6 minutes. Transfer the vegetables to a bowl; cover to keep warm.
2. Add the remaining 2 teaspoons oil and garlic to the pan and cook, stirring, until fragrant, about 30 seconds. Add shrimp and cook, stirring, for 1 minute. Remove from the heat. Stir in lemon juice and parsley. Serve the shrimp and sauce over the vegetables.

Bored with your phase 1 lunch? Try this recipe to spice things up!
ROTINI PASTA SALAD

INGREDIENTS
2 cups of zucchini chopped
Ideal Protein Rotini
Mixed Greens
1 slice of tomato chopped
1/4 cup of chopped cucumber
Approved dressing of choice

DIRECTIONS
Fill pan with water and bring to boil
Add rotini and chopped zucchini to water and season with sea salt and garlic or any other seasonings you like! Boil for approx 6-8 minutes until desired texture.
Use collander to remove water and set aside to cool.
After pasta and veggies are cooled toss with mixed greens, cucumber and tomato. Top with your favorite approved dressing!

Ideal Protein Recipe- Black Truffle Whole Roasted Chicken and Black Truffle Rutabaga Oven Fries with a homemade Chicken Gravy
Preheat oven to 425

1 whole chicken, cleaned and pat dry
Rub with Olive oil so seasonings have something to stick to
Season with
Paprika
Garlic powder
Onion powder
Black truffle sea salt
Black pepper

In the pan, I added celery and chicken stock or bouillon whatever you like to use... But you need about 2 cups of liquid in the bottom of the pan.

I tucked in the wings and tied the legs together as well...

Cook at 425 for 1-1.5 hours depending on your oven and size of chicken... Mine was 2lbs ... And in my convection oven it was done around 1 hour and 15 min...my chicken had a popper but if not use a meat thermometer to make sure it's cooked

After the chicken comes out let it rest for about 10 min to keep it from drying out... Slice and serve on a platter ....

For the rutabaga oven fries I peeled and sliced 1 rutabaga into fry type shapes then microwaved for 5 min and pat dry with a paper towel...

Your oven should be hot (425) so put a foil lined pan in the oven to get it nice and hot as well

While the pan is heating toss the "fries" with olive oil and season with black pepper, onion powder, garlic powder and paprika... (Or whatever you want)

Place the fries in a single layer in your hot pan (should sizzle a little, but this is good, it will help get them crispy) then sprinkle with black truffle salt and put in the oven...I wish I had an air fryer but at the moment I do not!

I baked mine for about 35 min and at the 20 min mark I flipped them over

For the gravy I strained my pan drippings to get rid of the fat and celery and other things...a fat separator works best....

Then I put 1 cup of the strained drippings in a sauce pan over medium heat.. I took another 1/3 cup of the drippings and dissolved the potato purée packet in it then poured that into the 1 cup that was already in the pan..

Let that bubble and stir often.. After 5-7 minutes it should thicken a bit... This isn't like regular gravy but it's darn good!

And that's it! Super easy and I was able to get my kitchen clean while everything baked!
