Here you can see the original sediment from our newly brewed Imperial IPA. Wow... I didn't expect the Irish moss to be effective that quickly.

The original gravity is around 1.1 with an expected final ABV of 9.3%.

Note the other carboy hiding in the background... that's an Irish Red with an OG of 1.060 and a projected ABV of 5.9%. The plan is to rack it onto about 8oz Dark Toasted Oak Chips soaked for a week in around 375ml of Four Roses bourbon and let that age for a while.

I'm so excited... these are some of the most interesting beers we've done yet.
