Hi, today is sunday and here is my main dish: lamb chops with cauliflower au gratin.
Ingredients for 4 people:
a cauliflower romanesco large or two small
12 lamb chops well beaten
extra virgin olive oil to taste
the juice of one lemon
a few sprigs of thyme
750 grams of béchamel
40 grams of grated Parmesan Reggiano
30 grams of grated Pecorino Romano
Put the chops marinated in lemon juice and thyme leaves at least one hour before cooking. Wash the cauliflower, clean it and divide it into peaks. Cook for 10 minuti to vapore (cooking is best for this dish: remaining al dente, not impregnated with water and keeps the color) after lightly salted. Season the white sauce with parmesan and pecorino.
Preheat the oven to 200 degrees static: place the cauliflower in a baking dish, with the tops facing up, and cover with a generous dose of béchamel. Bake for 15 minutes, until it has browned and you will have formed a golden crust on white sauce.
Heat the grill and cook the ribs (your choice of cooking, I prefer them cooked very well but they are one of the few I'm afraid) salty again that only when cooked. Serve the chops drizzled with extra virgin olive oil, cauliflower au gratin and garnish with a little thyme.
