The coconut milk tomato sauce ends up tasting like melted cheese (don’t ask, just taste!) and the eggs are cooked to perfection with the yolks slightly runny. Any nitrate/sugar/gluten free sausage will work in this recipe!

When I’m looking for something simple and hearty to eat, I love to make paleo stuffed sweet potatoes. You can stuff it with whatever you’d like, but my favorite is this recipe that contains chicken, bacon, and broccoli, Brussels sprouts, and spinach.

This pairs so well with the trip-tip I posted earlier! They’re tossed in lime juice and olive oil before being grilled and the light smokiness from the grill and poblano peppers balances the acidity nicely.

Just throw it all in your crockpot on low for 6 hours and you’ll pull out a perfectly tender and spicy chicken tikka masala. I use a cashew cream in place of the traditional dairy cream, but you’re welcome to sub it for a raw-milk cream if you’re able to tolerate it.
