I used to buy my son store-bought gluten-free chicken nuggets until I looked a little closer at the ingredients. I created these so I wasn't feeding him a bunch of nasty additives and grains. It took a dozen tries to get the recipe right and get him off the store-bought ones, but now we like "mommy's chicken nuggets" even better than store-bought! We typically make a double batch and freeze them for later.
